Lemon Pie

  • 1/2 cup cold water
  • 7 tbsp corn starch
  • 1 1/2 cups cold water
  • 1 1/4 cup granulated sugar
  • 2 egg yolks beaten slightly
  • 1 lemon, grated rind and juice
  • 1 tbsp butter

Mix 1/2 cup water and corn starch to thin paste. Combine 1 1/2 cups water with the sugar. Add this to cornstarch paste.  Use top of double boiler and let come to boil on burner, stirring constantly. Then place over boiling water in lower part of double boiler. Cook until thick about ten minutes. Have egg yolks ready. Pour a little of cooked filling over eggs then pour back in double boiler. Cook 1 minute longer. Remove, add butter, lemon rind and juice. Cool, add to crust. Put meringue on and brown in oven.
